Maracuya cake

RECIPE

Ingredients:

8 small maracuyá or 6 big units.

250 grams butter.

1 cup Brown sugar.

4 eggs.

3/4 kg aproximately spelt flour.

2 teaspoons baking powder.

Brown sugar to sprinkle on top of the cake before cooking.

Preheat oven to 200º .

Butter and flour a 26 cm round pan.

In a large bowl, stir together the sugar and butter. Add the eggs.

Mix well. Add the content of the fruit ( sedes included) and the flour and baking powder.

Pour evenly in the prepared pan.

Bake for 1 hour approximately and test with a toothpick or knife.

Cool in the pan for 15 minutes, then remove to a wire rack to cool completely.

Asparagus soup

Spring food

\r\n

Makes 4 servings

\r\n

INGREDIENTS:

\r\n

500 g green asparagus, rinsed.

\r\n

2 large onions thinly chopped.

\r\n

125 g unsalted butter.

\r\n

Half a litre boiling water.

\r\n

250 ml heavy cream or 250 g crème fraîche.

\r\n

100 g finely grated parmesan cheese.

\r\n

PREPARATION:

\r\n

Take the asparagus and cut 5 cm of top tips and 5 cm of the stalks. Discard the rest.

\r\n

Put the top tips in a bowl. Chop finely the stalks and place them in a bowl.

\r\n

In a large saucepan fry the onions in butter over a low heat, stirring until soft.

\r\n

Add the boiling water and the asparagus stalks. Bring them to a boil for 2 minutes.

\r\n

Remove from heat. Add the top tips of asparagus and cover the saucepan for one minute.

\r\n

With a hand immersion-blender or food processor, puree the soup until smooth.

\r\n

Add salt, cream and parmesan cheese. Stir until smooth.

\r\n

Serve hot.

\r\n

Decorate with tips of asparagus and sprinkle with finely grated parmesan cheese.

\r\n

The soup keeps, covered, two days in the refrigerator.

\r\n

Reheat before eating.

\r\n

Pancakes

These pancakes can be eaten with a sweet or salty filling.\r\n\r\nINGREDIENTS\r\n\r\n250 g baking flour , if only all purpose flour available, double the amount of baking powder in the recipe.\r\n\r\n4 eggs\r\n\r\n0,5 litre whole milk\r\n\r\n1 spoonful sugar\r\n\r\nA quarter teaspoon salt\r\n\r\n50 g butter ( melted )\r\n\r\n1 spoonful baking powder.\r\n\r\nDIRECTIONS\r\n\r\nIn a large bowl mix the flour, eggs, salt, sugar and cold milk until smooth.\r\n\r\nAdd the butter and baking powder.\r\n\r\nMix well.\r\n\r\nCook in a frying pan. Use a ladle to pour the mix into the pan previously buttered.\r\n\r\nBrown on both sides.\r\n

Baked tuna pie

INGREDIENTS:DOUGH:600 g sifted wheat flour.300 g  soft butter.3 eggs.1 teaspoon fine salt.2 teaspoons baking powder.2 tablespoons whole milk.1 egg yolk with 1 teaspoon sugar for decorating the top.FILLING:6 finely chopped onions. (1,200 kg)4 ripe tomatoes. (0,500 kg) finely sliced.4 roasted red peppers, peeled and seeded.  After cooked, slice them finely.6 chopped hard boiled eggs.400 g of pitted olives.400 g of tuna in olive oil (drained).2 tablespoons fine sal and ground black pepper.Olive oil.PREPARATION:Pre-heat oven at 200ºC. Roast the red peppers. When cold, seed them, peel them and slice them finely.Heat olive oil in pan. Fry the onions and add the tomatoes, fry at low heat until ready. Add salt and pepper. Incorporate the hard boiled eggs, the olives, the red peppers and the tuna and mix well.Pre-heat oven at 200ºC for baking the pie.Sift flour, baking powder and salt into a large bowl. Using your fingers, work in the butter until the mixture resembles coarse crumbs. Incorporate the eggs slowly and the whole milk and the dough comes together. Roll out the dough on a lightly floured work surface into a springform pan of 30 cm in diameter. Cover the base and sides with 2/3 of the dough. Bake for 20 minutes at 200ºC. Add the filling and cover with the rest of the dough. Decorate the top with the egg yolk to give it a golden brilliant touch.Serve hot or cold.

(Español) Ensalada de fruta en Champagne o Cava español. Servir frío.


Risotto

Ingredients for a perfect creamy risotto:1 1/2 cups of Carnaroli or Arborio rice.100 g butter.6 tablespoons olive oil.1/2 cup of cream.3 cups of meat or vegetable broth (boiling).1/2 cup of dry white wine.Salt.Freshly ground black pepper.1/2 cup freshly grated Parmesan cheese.Freshly grated Parmesan cheese for serving.Melt the butter in a saucepan. Add the onion and the oil, stir-fry until cooked. Season it with salt and pepper. Add the rice and stir constantly until it absorbs the butter, then add the wine until the rice absorbs it. Add the broth slowly constantly stiring the rice. Add the cream. Stir constantly to make the texture creamy and smooth until cooked.  Add  the 1/2 cup of finely grated Parmessan cheese. Serve hot. Sprinkle grated Parmesan cheese for serving.Perfect creamy risotto.
